HUMAN NUTRITION (HWE 100)

Sara's Human Nutrition students were assigned a specific elementary school. They had to complete research on the community of the school and learn more about how various demographic factors may affect nutrition. Following the research, they developed handouts targeted to the students and parents attending their assigned elementary school. Some student opted to include a recipe. The recipes were supplied by Slow Food Denver â€˜Lil Sprouts. Following are three example projects.

DOES ENVIRONMENT DETERMINE BMI?

In studying nutrition this semester at Red Rocks Community College, the class learned the foundation of
what a nutritious diet is and what implications can occur without proper nutrition. Many conversations in class
have stemmed around how eating healthy can be and is challenging for many. This is largely due to the environments people live in that do not support nutritious eating habits. Healthy foods are not always readily 
available, convenient, or affordable. Many families are surrounded my food options that cheap, quick, and easy, but lack nutrients.

EASY FRIED RICE FOR STRIVE PREP

The effects of living in low-income neighborhoods are far-reaching, and they affect individuals
and families in different ways, which can include food intake and availability. Such effects can
include areas known as food deserts, where accessibility to nutritious foods is complicated by
transportation, safety, and economy. This was made apparent in an Introduction to Nutrition
course at Red Rocks Community College. This project was the accumulation of study, through
internet-based papers, bookwork, and class time over the entirety of the nutrition course. The
following pages represent the service-learning requirement for this class.

MUNROE ELEMENTARY SCHOOL'S CHALLENGE FOR NUTRITION

Spring semester of 2021 at Red Rocks Community College, students in a Human
Nutrition class were required to create a service learning project. The project consisted of a
background research paper which complimented a hand out to students and parents from an
assigned elementary school and option of recipe. Keep in mind that the handouts needed to
remain at an elementary school reading level. The recipes were supplied by Slow Food Denver
‘Lil Sprouts; the one chosen for this particular project was Chinese Dumplings with Ginger Soy
Sauce. The school that was assigned to this project was Munroe Elementary School in the
neighborhood of Westwood in Denver.
